I’m attracted to bright, lively food this week, given the beautiful weather we’ve been having.
I’m also thinking about poultry, since we had a live turkey in our yard yesterday at dawn!
(Mr. Ruffled Feathers was just a little irritated that I was snapping pictures of him from close range; and he was probably nonplussed with my pajamas too.)
With that in mind, here are the lunches for this week!
Tuesday – Tuna Pan Bagnat (means ‘bathed bread’ in French) with Homemade Farafelle cold pasta salad
Wednesday – Almond and Goat-cheese stuffed Chicken with Couscous
Thursday – Tabbouleh with Chicken and Red Pepper, served with homemade hummus and pita chips
These are all based on recipes from the March 2009 Cooking Light. If you save cooking magazines like I do, here is a hint: store the magazines by the month in which they were published. I pulled out my entire March backlog at the beginning of this month. I find that it’s easier for me to find fresh ingredients at the store using March recipes (even if I would rather be in June.)
