The Lunch Bunch asked for burgers, but I am going to do a little takeoff on that and go for a sandwich theme this week!
I am very excited that it’s May- I put my April cooking magazines away and have broken out May editions. This week’s menu is adapted from May 2010 Cooking Light-
Tuesday: Caprese Wraps with Chicken
Wednesday: Banh Mi style Roast Beef Sandwich on homemade baguette
(5/6 —- My friend Mirna joined me for lunch while I was making the Bahn Mi- she said she “enjoyed my first meal from Catalyst Cooks. Jen thank you! for having me over, lunch and particularly the homemade bread was awesome!” Woo hoo!!)
Thursday: Sausage Fennel on homemade Subs
All served with fresh fruit and/or vegetables. I can’t wait! I’ll tell you more about my cooking exploits as the week progresses…
By the way, if any of you out there are downtown Mpls and these lunch menus look intriguing to you, I am taking on new clients for Tuesday/Wednesday/Thursday lunch deliveries. I promised Neighbor Dave that after I get past 8 clients, I’ll start driving him to work!
You need a refrigerator (or some way to keep your lunch cold from morning to noon) as well as access to a microwave (unless you like your food cold).
I’m looking into buying some glass lunch containers, taking a down payment on them, and using that for delivery— to eliminate use of plasticware for my lunch peeps!
